Oh Saturday..

Every Saturday when I wake up , I find myself thanking the Lord above that I made it through to Saturday, my day of rest and relaxation and Safe at home. My day to day is spent outside in the community making sure thousands of kids get a healthy nutritious meal while being exposed to those familiar to me and a multitude of perfect strangers unmasked and un gloved.
We are living in the most uncertain times that I have ever seen in life. Being told to stay in and shelter at home and quarantine ourselves is for everyone else but not for the “essential workforce”. Many businesses have sent workers home. Grocery store shelves are empty, but workers till must show up everyday to make sure the demand is met with supply. I could go on and on about so many things that are causing anxiety of every single minute of the day.
Back to my new favorite day of the week, oh Saturday, I get to sleep in and do I things I did not know that I wanted to do. Like make breakfast and enjoy the sound of the birds chirping. I want to share with you my favorite breakfast item French Toast Casserole, gluten free of course. My favorite recipe comes from Mama knows gluten free, I have made some modifications to fit my own tastes, I have included the modifications below but definitely check out Mama knows for gluten free and dairy free delights.
Bottom Layer
1 loaf gluten-free bread, toasted
1/2 cup brown sugar, packed
1 cup raisins
1 tablespoon ground cinnamon

Egg Mixture
6 large eggs, whisked
2 cups milk
1 teaspoon ground cinnamon
1/4 cup granulated sugar
1 tablespoon pure vanilla extract
Crumb Topping
1 cup all-purpose gluten-free flour, I like Pillsbury gluten-free
1/4 cup brown sugar, packed
1 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup unsalted butter, melted
Glaze
1.5 cups powdered sugar
1 teaspoon pure vanilla extract
2 tablespoons milk
